ouma s comforting healthy vegetable broth

when winter howls outside there is nothing more soothing than a bowl or cup of thick soup. the orange juice and spices in this recipe lend it the slightest tang and piquancy without interfering with the wholesome veggie taste. this is my own recipe, but this time i measured the ingredients instead of chucking it into the pot by feel! do not leave out the sugar (or a substitute), as it is essential. best of all: this soup should be made ahead, because standing for a few hours or overnight in the fridge develop the flavours. servings are a guess, because a large bowl with bread can be a meal on its own, or a small helping could be the starter to a winter night's dinner. butternut can be used instead of sweet potato or yams. for a thinner soup the potato can be left out.

Steps

  1. Prepare the vegetables
  2. Measure the spices and prepare the ginger
  3. And keep
  4. Make the broth / stock with hot water and cubes or granules
  5. And press out the orange juice
  6. Also add to the juice any orange flesh which comes loose in the juicing process
  7. Heat the oil in a large pot
  8. And add the chopped onion
  9. Chopped potato and carrot
  10. Stir well
  11. When the vegetables have softened slightly
  12. Add the fennel seeds
  13. Mustard or cardamom seeds
  14. Pepper and coriander
  15. Stir well and let the spices fry with the vegetables for a minute or two
  16. Add a little bit more oil if necessary
  17. Add the sweet potato chunks to the pot
  18. And also add the broth
  19. Orange juice
  20. Ginger
  21. Sugar and salt
  22. Stir
  23. Bring to a simmer
  24. Turn heat low and put on lid at a slight angle
  25. Simmer until the vegetables are soft
  26. About 30 minutes
  27. Pour the soup carefully into a processor
  28. And process until fairly smooth
  29. Taste for seasoning: you might want to add more salt
  30. Can wait in pot to be reheated a couple of hours later
  31. Or cooled completely and refrigerated for the next day
