  1. Preheat oven to 350 degrees
  2. Combine 3 / 4 cup all-purpose flour
  3. 1 / 4 teaspoons salt and pepper
  4. Heat 1 tablespoons olive oil in alarg non-stick skillet over medium-high heat
  5. Rinse chicken thighs and pat dry
  6. Cover chicken thighs with seasoned flour and shake off excess flour
  7. Add chicken to pan
  8. Cook 4 minutes on each side or until browned
  9. Remove chicken from pan
  10. Heat 1 tablespoon olive oil in pan over medium-high heat
  11. Add onion
  12. Carrot
  13. Celery and 2 garlic cloves
  14. Cover and cook 5 minutes or until tender
  15. Stirring occasionally
  16. Stir in wine
  17. Scraping pan to loosen browned bits
  18. Stir in 1 / 2 teaspoons salt
  19. Tomato
  20. Basil
  21. Oregano
  22. Rosemary and 1 tablespoons flour
  23. Bring to a boil
  24. Cover
  25. Reduce heat to medium-low
  26. And cook 15 minutes
  27. Transfer 1 / 2 of vegetable mixture into a covered baking dish
  28. Place browned chicken thighs on top of vegetables and cover with remaining vegetable mixture
  29. Cover and cook in preheated oven for 40 minutes or until chicken is done
  30. To prepare gremolata
  31. Combine last three ingredients
  32. Sprinkle over chicken mixture
