  1. 4 hours before cooking or the night before rub the french dry rub into the shanks
  2. Both sides
  3. In a large dutch oven over medium high heat add the oil and sear the shanks on both sides
  4. Reduce heat to medium and add the carrots
  5. Celery
  6. And onions and cook
  7. As is
  8. For 5 minutes
  9. Now add the tomatoes
  10. Broth
  11. Wine and pepper and fresh herbs
  12. Bring to a boil
  13. Cover and reduce to a simmer for 30 minutes
  14. When done remove shanks to individual plates along with the vegetables and over high heat quickly reduce the liquid
  15. Pour this over top
  16. I serve this with a cesar salad
  17. Garlic bread and roasted potatoes
  18. "dont forget the wine !"
