  1. In a 3 qt crock pot
  2. Combine garlic
  3. Onion
  4. Carrot
  5. Herbs
  6. Tomatoes
  7. Tomato paste
  8. And lemon zest
  9. Heat oil in a skillet over medium heat until shimmering
  10. Season the flour with salt and pepper
  11. Dredge the veal on all sides in the flour
  12. Then brown in the hot oil
  13. When browned on all sides
  14. Transfer the meat and any remaining oil to the crock pot
  15. Deglaze the skillet with the wine
  16. Then add the wine to the crock pot
  17. Cover and cook on low 6-8 hours
  18. Adjust seasoning to taste
  19. Combine gremolata ingredients
  20. Stir well and sprinkle on top of veal before serving
