  1. Cut two veal shanks into 2-inch pieces
  2. Roll shanks in flour and saute in butter over high heat until brown on all sides
  3. Add salt
  4. Pepper
  5. Celery
  6. Onion
  7. Carrots
  8. Mushrooms
  9. Tomato
  10. Sage
  11. And rosemary
  12. Reduce heat
  13. Cover and braise for 10 minutes
  14. Add white wine
  15. Cover and gently simmer for 2 ho urs
  16. The liquid should barely cover the meat
  17. Just before serving
  18. Stir in the gremolada
  19. This consists of the grated lemon rind
  20. Parsley
  21. Anchovy
  22. And garlic
  23. Serve with cooked rice
