Steps

  1. Wash the rice
  2. Allow to soak in salted water for 30 minute you can use thai or basmati rice
  3. Cut the lamb shoulder into cubes
  4. It should have some fat
  5. Bones are optional
  6. Slice the onions thinly and cut the carrots into strips
  7. You should approximately equal amounts of carrots
  8. Onions
  9. And lamb
  10. Heat a large cast-iron or metal wok with the oil
  11. "dont use olive oil"
  12. Sunflower oil works well
  13. Animal fat tastes richer but is even worse for you and too heavy for many taste buds
  14. While you can get away with any kind of pot
  15. It does taste better if you have an appropriate seasoned instrument
  16. Fry the onions until golden brown
  17. Add chopped garlic and lightly brown
  18. You can alternatively put the whole cloves into the rice when you cook the rice
  19. Add lamb and fry until cubes are lightly browned
  20. Add carrots
  21. Salt
  22. Pepper
  23. All spices
  24. And 2 cups of water
  25. Turn down the fire
  26. Mix well
  27. And cover for 5 min to allow carrots to soften
  28. This completes the first step called "zirvak"
  29. You are now ready to cook the rice in the second step
  30. Drain your rice which should have been soaking for 30 minute
  31. Push the ingredients to the outer parts of your cooking wok / pot creating a large hole in the centre which will be filled with liquid
  32. Carefully add your rice to the centre of the pot
  33. Do not mix it with the rest of the ingredients
  34. Try to fit most of it in the centre "hole"
  35. Add another 1
  36. 5 cups of water
  37. Cover the pot and allow to simmer until the rice is cooked and water has been dried up
  38. This will take approximately 30 minute
  39. Stir the entire mixture well and serve on a hearty plate or bowl
  40. Top with spring onions
  41. It goes well with a side-serving of salad
  42. Tomatoes
  43. And bread
  44. Naan or other type of flat bread would be best
