this is a great way to get your veggies in. the lemon dressing goes great with the orzo. the result is a colorful dish that's great for entertaining since you eat it at room temperature.

  1. Preheat the oven to 425 degrees f
  2. Toss the eggplant
  3. Bell peppers
  4. Onion
  5. And garlic with the olive oil
  6. Salt
  7. And pepper on a large sheet pan
  8. Roast for 40 minutes
  9. Until browned
  10. Turning once with a spatula
  11. Meanwhile
  12. Cook the orzo in boiling salted water for 7 to 9 minutes
  13. Until tender
  14. Drain and transfer to a large serving bowl
  15. Add the roasted vegetables to the pasta
  16. Scraping all the liquid and seasonings from the roasting pan into the pasta bowl
  17. For the dressing
  18. Combine the lemon juice
  19. Olive oil
  20. Salt
  21. And pepper and pour on the pasta and vegetables
  22. Let cool to room temperature
  23. Then add the scallions
  24. Pignolis
  25. Feta
  26. And basil
  27. Check the seasonings
  28. And serve at room temperature
