  1. For a version that is not quite so rich
  2. You may omit the parmesan cheese
  3. In a large saucepan
  4. Bring 1 quart of water to a boil
  5. Add the salt and orzo and cook until the orzo is tender and has absorbed almost all of the cooking liquid
  6. 8 to 9 minutes
  7. Stir in the butter
  8. Parmesan cheese
  9. Lemon zest and juice and parsley
  10. Serve immediately
