orzo with everything


i've had this for a while and don't remember where it came from. it goes well with summer grilling (fish, etc.). prep time does not include cooling time for the orzo.

  1. Cook orzo in boiling salted water until just tender
  2. Drain well
  3. In a large bowl toss orzo
  4. Sun-dried tomatoes
  5. Oil
  6. Vinegar and olives
  7. Let stand until room temperature
  8. Mix chopped radiccho
  9. Pine nuts
  10. Chopped basil
  11. Parmesan and garlic into orzo mixture
  12. Season to taste with salt and pepper
  13. Serve at room temperature
