orzo summa domae greek orzo salad


the title of this recipe is my attempt at calling it orzo delight, in greek. hopefully i'm not calling it something inappropriate!! this salad is a colorful orzo salad with a nice crunch. try it; you'll be sure to enjoy!

  1. Cook orzo per package directions
  2. Roast the red pepper:
  3. Quarter the pepper
  4. Remove stem and seeds
  5. Broil the pepper skin side up until skins blisters and blackens
  6. About 8-10 minutes
  7. Immediately put the pepper in a bowl
  8. Cover it with a lid or plastic wrap
  9. And let stand for 15-20 minutes
  10. Peel off and discard the charred skin
  11. Chop the pepper
  12. Combine the orzo
  13. Roasted red pepper
  14. Pistachios
  15. Green onions
  16. Olives
  17. Parsley and oregano in a large bowl
  18. Combine all the dressing ingredients together in a small bowl and whisk together
  19. Pour dressing over orzo mixture
  20. Tossing gently to coat
  21. Refrigerate
  22. Before serving
  23. Crumble 1 / 2 cup feta cheese over top of salad
