  1. Preheat the oven to 400 degrees f
  2. Pour the tomatoes into a large bowl and break apart using a pair of kitchen shears or your finger
  3. Add the zucchini
  4. Mint
  5. Cheese
  6. Olive oil
  7. Garlic
  8. Salt
  9. And pepper
  10. Stir to combine
  11. Meanwhile
  12. Bring the chicken broth to a boil in a medium saucepan over high heat
  13. Add the orzo and cook for 4 minutes
  14. The orzo should be only partially cooked
  15. Use a fine mesh sieve to transfer the orzo to the large bowl with the other vegetables
  16. Stir the orzo into the vegetable mix to combine
  17. Transfer the warm chicken broth to a 3-quart baking dish
  18. Slice the tops off the peppers and remove all ribs and seeds
  19. Cut a very thin slice from the base to help the peppers stand up
  20. Place the peppers in the baking dish with the warm chicken broth
  21. Spoon the orzo mixture into the peppers
  22. Cover the dish with foil and bake for 45 minutes
  23. Remove the foil
  24. Sprinkle the top of each pepper with cheese and continue baking until the cheese is golden
  25. About 15 minutes
  26. Remove from the oven
  27. Carefully transfer the orzo stuffed pepper to a serving plate
