  1. Slice leek in rings and saut with butter in a skillet for a few minutes over medium heat
  2. Set aside
  3. Heat broth in a large pot
  4. Heat oil in a separate pot and saut remaining leeks
  5. Parsley
  6. Celery
  7. Onion
  8. Garlic and mushrooms until the vegetables get a little mushy
  9. Add hot broth
  10. Season with salt and pepper
  11. Boil mixture for 20 minutes
  12. Process 1 cup of soup in a blender until mixture reaches a smooth consistency
  13. Add the pureed soup to the soup mixture
  14. Increase cooking temperature to bring soup to a boil
  15. Stir in orzo cook according to package directions
  16. Allow soup to rest ten minutes before transferring to individual bowls
  17. Garnish with leek rings and shaved parmigiano cheese
