this salad is an ideal summer supper or buffet offering---colorful, tasty, and easy to prepare.

  1. In large pot heat water to boiling
  2. Add orzo to water and cook until al dente: drain: rinse & set aside
  3. In large bowl add shrimp
  4. Both bell peppers
  5. Green onions
  6. & cilantro
  7. In food processor make dressing by first pulsing garlic until it is finely minced
  8. Add yogurt
  9. Salt and pepper
  10. Dijon
  11. Sugar
  12. Pulse until smooth
  13. Reserving half of dressing
  14. Pour half over shrimp & vegetables in bowl
  15. Add orzo and parmesan
  16. Stir well
  17. And refrigerate 1 hour
  18. Before serving stir in reserved half of dressing
