Steps

  1. In a sealable container
  2. Add the oil
  3. Lime juice
  4. Zest and seasonings
  5. Shake well and set aside
  6. Preheat the oven to 350 degrees
  7. On a non stick baking sheet
  8. Place the salmon portions
  9. Baste the fish with some of the dressing
  10. Place in heated oven and bake approximately 15-20 minutes
  11. Or until fish flakes
  12. Meanwhile
  13. Put all the remaining ingredients in a large bowl
  14. Add the rest of the dressing and mix well
  15. When fish is done
  16. Add the spinach to the salad and toss
  17. Divide the salad among 4 plates and place a salmon portion on top of each serving
