  1. Heat the oil in a large skillet
  2. Add the sausage and cook over high heat
  3. Crumbling as it cooks
  4. Until cooked through
  5. Transfer to a plate
  6. Leaving fat in the pan
  7. Lower the heat to medium
  8. And add onion and garlic to the pan
  9. Cover and cook
  10. Stirring occasionally
  11. Until softened
  12. About 4 minutes
  13. Add the orzo and cook
  14. Stirring
  15. About 3 minutes
  16. Add the stock and 2 cups of water
  17. Stirring constantly until the orzo is suspended in a thick
  18. Creamy broth
  19. About 15 minutes
  20. Season with salt and pepper
  21. Add the sausage
  22. Artichokes
  23. Peas
  24. Chives
  25. And parmesan to the orzo
  26. Cook
  27. Stirring until heated through
  28. About 4 minutes
  29. Serve immediately
  30. Passing extra grated cheese at the table
  31. If desired
