Steps

  1. Heat butter in 12 inch skillet
  2. Add onion and salt
  3. Cook 5 minutes until softened
  4. Add garlic
  5. Stir
  6. Add orzo
  7. Cook stirring often until orzo is lightly toasted and golden
  8. About 5 minutes remove from heat and add wine and stock
  9. Return to heat
  10. Bring to a boil
  11. Lower to simmer and cook 10-15 minutes until liquid is absorbed
  12. Stir in peas
  13. Parmesan
  14. Nutmeg and pepper
  15. Add salt if needed
