orzo and brown rice pilaf

Desciption

a quick and nutritious side dish that goes especially well with grilled food. the cooking time is cut down by using a quick-cooking brown rice, but do not use "instant" rice without adjusting the cooking time at the end.

Steps

  1. Heat oil in a heavy-bottomed pot over medium heat
  2. Add carrots
  3. Onions
  4. Red pepper and 1 / 4 teaspoon salt
  5. Saute
  6. Stirring occasionally until vegetables have softened
  7. About 8 minutes
  8. Lower heat
  9. If necessary
  10. To prevent onions from browning
  11. Add chicken broth and increase heat until boiling
  12. Add lentils and cook 10 minutes
  13. Stirring occasionally
  14. Add orzo and pepper to taste
  15. Add another 1 / 4 teaspoon salt if necessary
  16. Stir in brown rice
  17. Reduce heat to medium low and cook
  18. Covered
  19. 10 more minutes until all the liquid is absorbed and rice is tender
  20. Fluff with fork and serve
