orzo spinach stuffing


i have not made this but i think it would be a different change from the traditional cornbread stuffing we eat at thanksgiving time. this was exported from mastercook. i found it on recipe source. (enough for 8-10 lb turkey)

  1. Cook onion and garlic in oil in a large skillet over moderate heat
  2. Stirring occasionally
  3. For 2 minutes
  4. Add spinach and sugar
  5. Cook 4 minutes or until spinach is heated through
  6. Bring chicken broth and water to boiling in a large saucepan
  7. Add orzo
  8. Lemon rind and marjoram
  9. Lower heat
  10. Simmer
  11. Uncovered
  12. Until tender
  13. About 10 minutes
  14. Stir in lemon juice
  15. Raisins
  16. Pine nuts and spinach mixture
  17. Stuff turkey or chicken and roast
  18. Or spoon stuffing into lightly buttered 13 x 9 x 2 inch baking dish
  19. Bake covered
  20. In a preheated moderate oven for 40 minutes or until heated through
  21. Uncover last 10 minutes for crusty top
