although another recipe for this has been posted, it has been altered. i found this in the sacramento bee and according to them is taken from ww and has not been altered. it is hard to believe this recipe is a low fat dish.

Steps

  1. Preheat oven to 350 degrees
  2. Spray a nonstick baking sheet with nonstick cooking spray
  3. In a small bowl
  4. Combine the orange juice
  5. Mustard and salt
  6. On a sheet of wax paper combine the cracker crumbs
  7. Orange zest
  8. Shallot
  9. And pepper
  10. Brush the chicken on both sides with the mustard mixture then dredge in the crumbs
  11. Firmly pressing the crumbs to coat both sides
  12. Place the chicken on the baking sheet
  13. Bake 15 minutes
  14. Turn over and bake until cooked through
  15. 15 to 20 minutes longer
