Steps

  1. Mix 1 / 2 cup of the sugar
  2. Flour and salt in top of double boiler
  3. Blend in 3 egg yolks and milk
  4. Cook
  5. Uncovered
  6. Over boiling water 10 to 12 minutes or until thickened
  7. Stirring constantly
  8. Remove from heat
  9. Stir in vanilla
  10. Reserve 10 of the wafers for garnish
  11. Spread small amount of custard on bottom of 1-1 / 2-quart baking dish
  12. Cover with layers of 1 / 3 each of the remaining wafers and sliced bananas
  13. Pour about 1 / 3 of the remaining custard over bananas
  14. Continue to layer wafers
  15. Bananas and custard to make a total of 3 layers of each
  16. Ending with custard
  17. Beat egg whites on high speed of electric mixer until soft peaks form
  18. Gradually add remaining 1 / 4 cup sugar
  19. Beating until stiff but not dry
  20. Spoon over custard
  21. Spread evenly to cover entire surface of custard and sealing well to edge
  22. Bake at 350f for 15 to 20 minutes or until lightly browned
  23. Cool slightly or refrigerate several hours until chilled
  24. Top with reserved wafers just before serving
  25. Garnish with additional banana slices
  26. If desired
