  1. Bring a large saucepan of lightly salted water to a boil
  2. Add the egg noodles and cook briefly until just tender
  3. About 5 minutes
  4. Drain thoroughly
  5. Thinly slice the red onion and the shitake mushrooms
  6. Preheat a wok
  7. Or heavy skillet
  8. And add the vegetable oil and swirl it around
  9. When the oil is hot
  10. Add the onion and mushrooms
  11. And stir fry for 3 minutes
  12. Add the noodles to the wok with the soy sauce
  13. Balsamic vinegar
  14. Brown sugar and salt
  15. Toss them over the heat for 3 minutes
  16. Add the sesame oil
  17. Transfer to a warmed bowl
  18. And serve at once
  19. Garnished with the parsley leaves
  20. If desired
