  1. Peel pumpkin
  2. Remove seeds
  3. Wash and cube
  4. Heat oil in a large pan
  5. Stir fry garlic
  6. Ginger and green onions until fragrant
  7. Add pumpkin
  8. Sprinkle in sugar and saut for about 8-10 minutes until the pumpkin is soft
  9. Add in chicken stock and fish sauce
  10. Bring to a boil
  11. Then reduce heat and let it simmer for about 15 minutes
  12. The pumpkin will be a little mushy at this point
  13. Stir in preserve evenly
  14. Sprinkle with pepper and serve with jasmine rice
