oriental inspired vegetable soup

a big batch of oriental-style vegetable soup: enjoy it now and freeze the rest for lunches on the go. i created this one day when i was wanting something to warm me up on a cold winter day in buffalo. my family loves it! omit fish oil for vegetarian/vegan fare. for a gluten-free recipe, use tamari rather than soy sauce.

Steps

  1. Add 9 quarts of water to a 12 quart soup pot on high
  2. Add boullion
  3. Tamari
  4. Rice vinegar
  5. Lime juice
  6. Fish oil
  7. Ketchup
  8. Raw sugar
  9. Hot chili oil
  10. Sesame oil
  11. Ginger
  12. And chives
  13. Bring to a boil
  14. Reduce heat
  15. Cover
  16. And simmer while preparing vegetables
  17. Add ingredients as you prepare them: bagged coleslaw
  18. Bagged spinach
  19. Crimini mushrooms
  20. Red roasted peppers
  21. Carrots
  22. Add canned foods after draining and rinsing thoroughly: water chestnuts
  23. Baby corn
  24. And bamboo shoots
  25. In a frying pan
  26. Add peanut oil and cook on medium-high heat for a minute or two until oil is heated to desired temperature
  27. Add chopped onions and stir to coat with oil
  28. Add a pinch of salt to absorb water from onions and to speed up caramelizing
  29. Continue to stir the onions
  30. Onions will begin to stick to the pan a bit and will begin to darken
  31. If the onions are sticking too much
  32. Add a small amount of water to deglaze
  33. Keep stirring
  34. Continue the deglazing process until onions are a deep
  35. Rich brown
  36. Add garlic to onions and cook for an additional minute
  37. Pour a ladle of soup into the frying pan to stop the cooking process and help loosen any onions and garlic stuck to the frying pan
  38. Add contents of frying pan to soup
  39. Allow soup to cook for several hours to bring out flavors
  40. Add pepper and crushed red pepper flake to taste
