oriental chicken pasta salad


this can be served warm, but i prefer it chilled. it is very low fat and healthy, but tastes delicious. great to take to a potluck, it always gets raves!

  1. Cut chicken into strips
  2. Combine vinegar
  3. Soy sauce
  4. Gingerroot
  5. Garlic
  6. And sugar in a zip lock bag
  7. Add chicken
  8. Press out the air and seal
  9. Let stand at least 30 minutes
  10. Meanwhile
  11. Cook pasta and rinse in cold water
  12. Put in a large bowl
  13. Cut carrots and peppers into julienne strips
  14. Remove chicken from marinade but save the marinade
  15. Cook chicken in a small amount of oil in a non-stick pan
  16. Add chicken to pasta
  17. Add carrots to skillet
  18. Stir fry for a minute or two
  19. Then add peppers and snow peas
  20. Cook until still crispy
  21. Put vegetables in ice water to stop the cooking
  22. Add vegetables to salad bowl
  23. Add reserved marinade plus 1 / 2 cup water to skillet and bring to boil
  24. Boil gently for 10 minutes
  25. Pour over salad
  26. Add sesame oil and toss
  27. Refrigerate for up to 2 days
  28. Preparation time does not include marinating time
