oriental bulgur rice salad


this tasty salad makes a nice side dish or a good main dish by adding cooked chicken or seafood. the recipe comes from taste of homes light & tasty magazine.

  1. Place bulgur in a bowl
  2. Stir in boiling water
  3. Cover and let stand 30 minutes or until most of the liquid is absorbed
  4. Drain and squeeze dry
  5. In a bowl combine the rice
  6. Celery
  7. Carrot
  8. Green pepper
  9. Cranberries
  10. And bulgur
  11. In a jar with a tight-fitting lid
  12. Combine the parsley
  13. Vinegar
  14. Olive oil
  15. Onion
  16. Water
  17. Sesame oil
  18. Honey
  19. Garlic and seasonings
  20. Shake well
  21. Pour over rice mixture
  22. Toss gently to coat
  23. Arrange greens on salad plates
  24. Top with rice mixture
  25. Sprinkle with almonds
