  1. Whisk together garlic
  2. Shallots
  3. Rosemary
  4. Oregano
  5. Oil and lemon juice
  6. In a medium non-reactive bowl
  7. Use marinade immediately
  8. If desired
  9. Turn marinade into finishing sauce
  10. After removing meat
  11. Pour marinade into a non-reactive saucepan
  12. And boil for 3 minutes
  13. Brush on cooked meat just before serving
  14. Makes enough for 2 pounds of lamb
