  1. For blueberry sauce:bring blueberries
  2. 1 / 2 cup apple juice and sugar to boil in a heavy medium saucepan
  3. Simmer over medium heat until reduced to 2 cups
  4. About 15 minutes
  5. Dissolve 1 tablespoon cornstarch into remaining 2 tablespoons apple juice and add to blueberry mixture
  6. Add lemon juice
  7. Bring to a boil
  8. Stirring constantly
  9. Simmer until thick
  10. About 1 minute
  11. Cool slightly
  12. For waffles: whisk first 6 ingredients in large bowl to blend
  13. Whisk eggs
  14. Buttermik
  15. Melted butter and lemon peel in small bowl to blend
  16. Add buttermilk mixture to flour mixture all at once and whisk until just blended
  17. Let stand for about 15 minutes
  18. "preheat waffle iron according to manufactures instructions"
  19. Spoon batter onto waffle iron
  20. Cover and cook until golden and cooked through
  21. About 7 minutes
  22. Repeat with remaining batter
  23. Serve immediately with warm blueberry sauce
