Steps

  1. Combine all syrup ingredients in medium saucepan
  2. Bring to a boil over medium-high heat
  3. Reduce heat to medium or medium-low
  4. Gently boil 5 minutes or until slightly thickened
  5. Cool
  6. Place half of the pistachios in food processor
  7. Process until finely chopped
  8. Repeat with remaining pistachios
  9. In medium bowl
  10. Combine all filling ingredients
  11. Heat butter in microwave-safe measuring cup in microwave on high 40 to 60 seconds or until melted
  12. Skim and discard foam off top
  13. Pour clear butter into small cup
  14. Discard remaining milky substance at bottom
  15. Heat oven to 350f
  16. Butter 13x9-inch baking pan
  17. Unroll phyllo onto cutting board
  18. Cut to 13x9 inches
  19. Discard excess phyllo
  20. Or reserve for another use
  21. Cover phyllo with large dry towel
  22. Lay 1 phyllo sheet in bottom of pan
  23. Brush with butter
  24. Repeat
  25. Using 12 phyllo sheets
  26. Evenly sprinkle filling over phyllo
  27. Top with remaining 12 phyllo sheets
  28. Brushing each layer with butter
  29. Cut baklava crosswise into 1 1 / 2-inch strips
  30. Cutting all the way to bottom
  31. Cut diagonally to create diamond shapes
  32. Or cut into squares
  33. Bake 25 to 30 minutes or until slightly puffed and light golden brown
  34. Place on wire rack
  35. Immediately pour cooled syrup over baklava
  36. Cool completely
