lemon mustard sauce


a wonderful sauce to use as an accompaniment for fish, or served hot over steamed vegetables such as asparagus.

  • Carbohydrates: 246.3

  1. In a heavy-based medium saucepan
  2. Melt butter
  3. Add flour all at once
  4. Cook
  5. Stirring constantly
  6. For 3 minutes
  7. Add stock all at once
  8. Blend mixture with a whisk
  9. Cook mixture over low heat for 5 or 6 minutes
  10. Stirring often
  11. Gently beat in egg yolks and add lemon juice
  12. Whisking constantly
  13. Add mustard and mix
  14. Add salt
  15. Cook 1 or 2 minutes longer
  16. Add cayenne pepper a little at a time
  17. Stirring and tasting until desired degree of "heat" is achieved
