lemon maple zucchini bread


i haven't tried this yet, but i'm posting here so i don't lose this recipe because it looks so good! the recipe comes from the maple syrup cookbook by ken haedrich.

  1. Preheat oven to 350 degrees f
  2. Grease 9" x 5" loaf pan and set aside
  3. Beat the eggs with an electric mixer for 2 minutes
  4. Gradually add the maple syrup
  5. Oil
  6. Vanilla
  7. And lemon zest
  8. Stir in the zucchini
  9. Combine the unbleached and wheat flours
  10. Baking powder
  11. And salt in a large bowl
  12. Make a well in the center
  13. Then stir in the zucchini mixture
  14. Blend just until smooth
  15. Then turn into the prepared pan
  16. Bake for 50 to 60 minutes
  17. Until a tester inserted into the center comes out clean
  18. Cool in the pan for 5 to 10 minutes
  19. Then remove and cool completely on a wire rack
