  1. Preheat oven to 350
  2. Coat 2 round cake pans with cooking spray
  3. Line bottoms of pans with wax paper
  4. Coat wax paper with cooking spray
  5. Place sugar and butter in a large bowl
  6. Beat with a mixer at medium speed until well blended
  7. Add egg substitute and the next 3 ingredients
  8. Beat well
  9. Combine flour
  10. Baking powder
  11. Baking soda
  12. And salt
  13. Stirring well with a whisk
  14. Add flour mixture and buttermilk alternately to sugar mixture
  15. Spoon batter into prepared pans
  16. Bake for 30 minutes or until a wooden pick inserted in center comes out clean
  17. Cool in pans on a wire rack 10 minutes
  18. Remove cakes from pans
  19. Carefully peel off wax paper
  20. Cool completely on wire racks coated with cooking spray
  21. To prepare icing
  22. Place 1 teaspoon lemon rind and next 3 ingredients in a medium bowl
  23. Beat with a mixer at medium speed until smooth
  24. Gradually add powdered sugar
  25. Beating at low speed just until blended
  26. Cover and chill for 30 minutes
  27. Place 1 cake layer on a plate
  28. Spread with 1 / 2 cup icing
  29. Top with remaining cake layer
  30. Spread remaining icing over top and sides of cake
  31. Chill 1 hour
  32. Store cake loosely covered in refrigerator
