  1. Sift flour
  2. Baking powder and 1 / 4 teaspoons salt into bowl
  3. Cream butter and brown sugar with a mixer on medium speed until pale and fluffy
  4. About 3 minutes
  5. Add candied ginger
  6. And beat for 2 minutes
  7. Beat in egg and vanilla until well combined
  8. Add flour mixture
  9. Then beat on medium-low speed until dough just comes together
  10. Shape dough into two 1-inch thick disks
  11. Wrap tightly in plastic and refrigerate for at least 1 hour
  12. Or up to 3 days
  13. Preheat oven to 350f roll out 1 disk on a lightly floured surface to 1 / 4 inch thickness
  14. And cut out 2-inch circles
  15. Place rounds 1 / 2 inch apart on parchment-lined baking sheets
  16. Rolls out scraps
  17. Refrigerate rounds for 10 minutes
  18. Bake rotating sheets halfway through
  19. Until cookies are set and edges are bright gold
  20. 12-14 minutes
  21. Transfer parchment with cookies to wire racks
  22. Let cook completely
  23. Repeat with remaining dough
  24. Cookies can be stored for up to 3 days

  30. Drizzle glaze over the cooked cookies
  31. Let stand until glaze is set
