from 'the good housekeeping cookbook'. while potatoes are still warm, you may toss them with your favorite vinaigrette for a grilled potato salad. tossing while still warm helps the potatoes to absorb the flavor of the dressing.

  1. In large bowl
  2. Toss potatoes
  3. Garlic
  4. Olive oil
  5. Lemon peel
  6. Salt
  7. And pepper until potatoes are evenly coated
  8. Layer two 30" by 18" sheets
  9. Heavy-duty foil to make a double thickness
  10. Place potato mixture on center of stacked foil
  11. Bring short ends of foil up and over potatoes
  12. Fold several times to seal well
  13. Fold remaining sides of foil several times to seal in juices
  14. Place packet on grill over medium heat and cook 30 minutes
  15. Or until potatoes are fork-tender
  16. Turning packet over once halfway through grilling
  17. Shallot & herb packet variation:
  18. Prepare as above but omit garlic
  19. Add 2 medium shallots
  20. Thinly sliced
  21. And 2 tsp minced fresh thyme leaves or 1 / 2 tsp dried thyme
  22. Wrap and grill as above
  23. Sprinkle with 1 / 3 cup chopped fresh parsley before serving
