  1. Process almonds and 1 tablespoon granulated sugar in a food processor until finely ground
  2. Transfer to a medium bowl
  3. "stir in confectioners sugar"
  4. Put egg whites and salt into bowl of mixer and using whisk beat on medium until soft peaks form
  5. Add remaining granulated sugar
  6. Beat until stiff peaks form
  7. Mix in vanilla and lemon juice
  8. Fold in almond mixture in 2 batches
  9. Stir in zest
  10. Preheat oven to 300 degrees
  11. Put batter in a pastry bag fitted with a 1 1 / 2- inch round
  12. Bake until golden and set
  13. About 15 minutes
  14. Let cool on a wire rack
  15. Bring cream to a boil in a pan
  16. Pour over chocolate and espresso in a heatproof bowl
  17. Whisk
  18. Freeze
  19. Stirring
  20. Until thick
  21. 6 minutes
  22. Spread 2 teaspoons filling onto bottom of half of the cookies
  23. Sandwich with remaining cookies
  24. "dust with confectioners sugar"
