lemon drizzled lemon muffins


these muffins have a subtle lemon flavor. the glaze is a little more lemony and what makes these taste so good, imho.

  1. Spray 12 muffin cups with non-stick cooking spray
  2. Set aside
  3. Add the flour
  4. Sugar
  5. Baking powder
  6. Baking soda
  7. Salt
  8. And lemon zest to a mixing bowl
  9. Stir to blend
  10. In another bowl
  11. Add the yogurt
  12. Oil
  13. Egg
  14. And vanilla
  15. Whisk until smooth
  16. Add liquid ingredients to the dry ingredients
  17. Stir until just combined and moistened
  18. Pour batter into muffin cups
  19. Bake at 400for about 20 minutes or until the tops are golden and pick comes out clean
  20. Let cool slightly
  21. Lemon drizzle: add powdered sugar and lemon juice to a small bowl
  22. Stir until smooth
  23. Drizzle the mixture over the muffins while they are still warm
  24. Let muffins cool completely and the drizzle set before taking muffins out of pan
