lemon dill pesto

Desciption

this is a scandinavian twist on basil pesto. you may substitute this for basil pesto and it's particularly good on grilled fish or chicken.

Steps

  1. Place walnuts and garlic in a food processor and process until finely chopped
  2. Add the dill
  3. Lemon zest
  4. And salt
  5. Process until you have a thick paste
  6. Continue to process while gradually adding the oil until the pesto is the consistency of a thick tomato sauce
  7. Refrigerate until ready to use
