lemon chicken stir fry


an easy stir-fry that i like because it uses fresh vegetables.

  • Carbohydrates: 421.0

  1. Prepare pasta according to package directions
  2. Drain and set aside
  3. In a large skillet
  4. Heat oil over medium-high heat
  5. Add the chicken and onion
  6. Stir-fry for 5-6 minutes or until chicken is no longer pink
  7. Add in the broccoli and peas
  8. Stir-fry 4-5 minutes or until crisp-tender
  9. In a small bowl
  10. Mix together the broth
  11. Thyme
  12. Lemon peel
  13. Cornstarch
  14. And lemon pepper
  15. Pour into chicken mixture
  16. Cook 1-2 mintues or until sauce is thickened and veggies are cooked
  17. Stir in tomatoes
  18. Cook until just heated
  19. Season with salt if needed
  20. Serve chicken mixture over angel hair pasta
