lemon cheese souffle with lemon ginger sauce


this is a light and lemony dessert with a great zingy sauce!

  1. Preheat the oven to 350 degrees
  2. Lightly coat a 6-cup souffle dish with nonstick cooking spray
  3. "sprinkle with the 1 tablespoon confectioners sugar to coat the dish"
  4. Put the cottage cheese
  5. Sugar
  6. Egg yolks
  7. And lemon rind in a blender
  8. Process 1 minute until well blended
  9. In a medium bowl
  10. Beat lemon juice and egg whites until soft peaks form
  11. "gradually beat in 1 / 3 cup confectioners sugar until stiff glossy peaks form"
  12. Put 1 cup of the beaten egg whites in the blender with the cheese mixture
  13. Process until blended
  14. Pour cheese mixture into bowl with egg whites and carefully fold in just until combined
  15. Pour into the prepared souffle dish
  16. Place the souffle dish in a pan just big enough to hold it
  17. Fill the pan with hot water to come halfway up the side of the souffle dish
  18. Bake at 350 for 35 minutes
  19. While souffle is baking
  20. Make the sauce: combine 1 1 / 4 cups water
  21. Sugar
  22. Lemon juice
  23. Lemon rind
  24. And ginger in a small saucepan
  25. Bring to boiling over medium heat
  26. Dissolve cornstarch in 2 tablespoons water until blended
  27. Stir into lemon sauce mixture
  28. Boil 1 minute
