this recipe is really delicious and contains two of my favourite flavours - lemon and blueberry!

Steps

  1. Preheat oven to 350f line 913-inch metal baking pan with foil
  2. Leaving a 1-inch overhang on the ends
  3. Spray foil with cooking spray- bottom and sides of the pan
  4. In a large bowl
  5. Whisk together flour
  6. Oats
  7. Coconut
  8. Sugar
  9. Salt
  10. And baking powder
  11. Using a pastry cutter
  12. Blend the butter completely into the flour mixture
  13. Transfer 2 cups of the crumb mixture to another bowl and reserve for the topping
  14. Blend the egg white into the remaining crumbs and then press the mixture into the bottom of the pan to form a level crust
  15. Use the bottom of a flat
  16. Wide glass to tap the mixture and even it out
  17. Bake the crust 10-12 minutes
  18. Or until it starts to form a dry top
  19. Meanwhile
  20. In a medium bowl
  21. Whisk condensed milk
  22. Lemon juice & zest
  23. And egg yolk
  24. Let mixture stand for 5 minutes
  25. Sprinkle blueberries evenly over hot crust and then drop spoonfuls of the lemon mixture over the blueberries
  26. Spread gently w / a spatula to distribute as evenly as you can
  27. Bake until lemon mixture begins to form a shiny skin- 7 to 8 minutes
  28. Sprinkle reserved crumble topping over the lemon-blueberry layer
  29. Pressing the streusel between your fingers into small lumps as you sprinkle
  30. Bake until filling is bubbly at the edges and the topping is brown
  31. 25 to 30 minutes
  32. Let bars cool in the pan on a rack until just warm
  33. About an hour
  34. Carefully lift them out of the pan using the foil overhang and transfer to a wire rack to cool completely
  35. Remove foil and cut into 24 bars when cool
