  1. Place the potatoes
  2. Chicken stock
  3. Lemon juice
  4. 1 tablespoon olive oil
  5. Salt
  6. And pepper in a medium saucepan
  7. Bring to a boil over medium-high heat
  8. Reduce the heat and simmer until the potatoes are tender
  9. About 20 to 25 minutes
  10. Drain the potatoes and place in a serving bowl
  11. Drizzle with the remaining olive oil
  12. Add the lemon zest
  13. Salt and pepper to taste
  14. And 3 tablespoons of the basil
  15. Toss well and garnish with the remaining chopped basil
