lemon basil chicken schnitzel


i got this recipe many years ago from a dear friend of mine, and it's become one of my family's favourites.

  1. Combine crumbs
  2. Cheese and seasonings in a shallow dish
  3. In a large dish beat egg with lemon juice
  4. Dip chicken pieces in egg mixture
  5. Roll in crumb mixture and pat to ensure even layer of crumbs
  6. Place on rack or wax paper
  7. Heat butter and oil together in frying pan over medium heat
  8. Add several peices of chicken at a time but do not crowd
  9. Cook until golden on both sides
  10. About 5 minutes per side
  11. Remove to serving platter
  12. Brown any remaining chicken pieces
  13. Return all chicken to the pan
  14. Cover and cook for 2 minutes more or until chicken feels springy to the touch
