lemon basil chicken breasts


i got this dinner idea out of southern living. pretty quick and easy. prep time includes chilling time.

  • Carbohydrates: 411.5

  1. Whisk together first six ingredients in a large bowl
  2. Mixing well
  3. Add chicken
  4. Cover and refrigerate for 40 minutes or so
  5. Turning occasionally
  6. Remove chicken from marinade
  7. And save marinade
  8. Cook chicken in 1 tablespoon hot oil in a large skillet over medium-high heat 5 minutes on each side or until golden brown
  9. Pour reserved marinade through a wire mesh strainer into skillet
  10. Reduce heat to medium-low
  11. Cover and simmer 8-10 minutes or until chicken is done
  12. Serve over rice
