lemon almond buttermilk loaf with balsamic strawberries


exceptional taste and texture. adapted from bon appetit, april 1999. i use red mill brand almond meal rather than grind my own almonds. if you do not have buttermilk, you can substitute yogurt, sour cream, or milk.

  1. Preheat oven to 350f
  2. Butter and flour 9 x 5 x 2 1 / 2-inch metal loaf pan
  3. Sift flour
  4. Salt and baking soda into medium bowl
  5. Using electric mixer
  6. Beat 1 1 / 2 cups sugar and butter in large bowl until well blended
  7. Add eggs 1 at a time
  8. Beating well after each addition
  9. Mix in almond extract
  10. Add dry ingredients to egg mixture alternately with buttermilk in 3 additions each
  11. Beating until well blended after each addition
  12. Add ground almonds and lemon peel and beat 1 minute
  13. Transfer batter to prepared pan
  14. Bake cake until deep golden brown and cracked on top and tester inserted into center comes out clean
  15. About 50-60 minutes
  16. Cool cake in pan on rack 15 minutes

  18. Meanwhile
  19. Stir remaining 1 / 2 cup sugar and 5 tablespoons lemon juice in small bowl until sugar dissolves
  20. Place rack on baking sheet
  21. Turn cake out onto rack
  22. Top side up
  23. Using skewer or toothpick
  24. Poke holes 1 to 2 inches apart all over cake
  25. Brush top and sides of cake with all of lemon glaze
  26. Allowing some glaze to soak into cake before brushing with more
  27. Cool cake completely
  28. Slice cake
  29. Serve with balsamic strawberries
  30. Balsamic strawberries:
  31. Toss strawberries
  32. Sugar and balsamic vinegar in medium bowl
  33. Let stand at room temperature until juices form
  34. At least 1 hour and up to 3 hours
