this is a beautifully fragrant and delicious soup from southern living. orzo pasta is such a wonderful addition to any soup.

  1. Combine first 4 ingredients
  2. 2 teaspoons lemon zest
  3. And 1 / 2 teaspoons rosemary in a medium bowl
  4. Shape into 30 meatballs
  5. Saute meatballs
  6. In two batches
  7. In 1 tablespoons hot oil per batch in a dutch oven over medium heat 3-4 minutes or until browned
  8. Remove with a slotted spoon
  9. Saute onion and next 2 ingredients in remaining 1 tablespoons hot oil in dutch oven over medium-high heat 3-5 minutes or until tender
  10. Stir in broth
  11. Lemon juice
  12. And remaining 2 teaspoons zest and 1 / 2 teaspoons rosemary
  13. Bring to a boil
  14. Stirring occasionally
  15. Add orzo
  16. Reduce heat to medium
  17. Simmer
  18. Stirring occasionally
  19. 7 - 9 minutes or until pasta is almost tender
  20. Stir in meatballs
  21. Simmer
  22. Stirring occasionally
  23. 5-7 minutes or until meatballs are thoroughly cooked
  24. Add salt and pepper to taste
  25. Top with cheese and parsley
