lemon fennel and rocket arugula salad

  1. Cut the lemons and oranges into thin slices
  2. Removing any seeds
  3. Thinly slice the fennel
  4. Wash and dry the rocket leaves and tear them into small pieces
  5. Chill all ingredients while making the toasted sesame dressing: heat the sesame oil in a small pan over medium heat
  6. Add the sesame seeds and cook
  7. Stirring constantly until lightly golden
  8. Remove from heat and cool
  9. Pour mixture into a small container
  10. Whisk in the white wine vinegar and mustard
  11. And season with salt and black pepper
  12. Combine the fruit
  13. Fennel
  14. Rocket
  15. Pecans
  16. And olives in a shallow serving bowl
  17. Drizzle with the dressing
