  1. In a large bowl combine sugar
  2. Oil
  3. Eggs
  4. Lemon extract
  5. Poppy seed and mix well
  6. Stir in shredded zucchini
  7. Combine in another bowl
  8. Flour
  9. Baking powder
  10. Baking soda and salt
  11. Mix well
  12. Gradually add this mixture to the zucchini mixture
  13. Mix throughly
  14. Pour into greased 9x13 pan
  15. Bake 350 for 40-50 minutes or until a tooth pick comes out clean
  16. Add a lemon glaze for the topping - 1 / 2 cup sugar
  17. 1 teaspoon lemon extract
  18. 1 tablespoon water
  19. In a saucepan bring to a boil
  20. When cake is warm
  21. Brush with glaze
