  1. Preheat oven to 325 degrees f
  2. Grease an 8x4 inch loaf pan
  3. In a bowl
  4. Beat together the zucchini
  5. Sugar
  6. Egg
  7. And oil
  8. In a separate bowl
  9. Sift together the flour
  10. Salt
  11. Baking soda
  12. And baking powder
  13. Stir in the cinnamon and lemon zest
  14. Stir the flour mixture into the zucchini mixture just until blended
  15. Pour the batter into the prepared pan
  16. Bake 45 minutes in the preheated oven
  17. Until a knife inserted in the center comes out clean
  18. Remove from heat
  19. And cool about 10 minutes before turning out onto a wire rack to cool completely
