lemon zucchini bars


a light and colorful cake like bar with a dusting of confectioners sugar for a topping or add a lemon glaze.

  1. In a large bowl combine sugar
  2. Oil
  3. Eggs
  4. Lemon zest and lemon juice
  5. Mix well
  6. Stir in shredded zucchini
  7. Combine in another bowl
  8. Flour
  9. Baking powder
  10. Baking soda and salt
  11. Mix well
  12. Gradually add this mixture to the zucchini mixture
  13. Mix throughly
  14. Pour into greased 9x13 pan
  15. Bake 350 for 45-50 minutes
  16. Cool
  17. Dust with confectioners sugar
  18. Or if you like a lemon glaze for the topping:
  19. 1 / 2 cup sugar
  20. Zest of one lemon
  21. Juice of one lemon
  22. In a saucepan bring to a boil
  23. When cake is warm
  24. Poke holes in top with a toothpick brush with glaze
