  1. Preheat the oven to 350 degrees f
  2. Grease an 8 1 / 2 by 4 1 / 4 by 2 1 / 2-inch loaf pan
  3. Line the bottom with parchment paper
  4. Grease and flour the pan
  5. Sift together the flour
  6. Baking powder
  7. And salt into 1 bowl
  8. In another bowl
  9. Whisk together the yogurt
  10. 1 cup sugar
  11. The eggs
  12. Lemon zest
  13. And vanilla
  14. Slowly whisk the dry ingredients into the wet ingredients

  16. Fold the vegetable oil into the batter
  17. Making sure its all incorporated"
  18. Pour the batter into the prepared pan and bake for about 50 minutes
  19. Or until a cake tester placed in the center of the loaf comes out clean

  21. Cook the 1 / 3 cup lemon juice and remaining 1 / 3 cup sugar in a small pan until the sugar dissolves and the mixture is clear
  22. Set aside
  23. When the cake is done
  24. Allow it to cool in the pan for 10 minutes
  25. Carefully place on a baking rack over a sheet pan
  26. While the cake is still warm
  27. Pour the lemon-sugar mixture over the cake and allow it to soak inches cool
