i haven't tried this cake but it sure looks good. its a splenda sugar blend cake. if you try it before i do, let me know what you thought of it. hopefully it will be yummy.

Steps

  1. Cake layer directions:
  2. Preheat oven to 350f grease and flour two round cake pans
  3. Combine flour
  4. Sugar blend
  5. Baking powder and salt in a mixing bowl
  6. Cut butter into flour mixture with a fork or a pastry blender until crumbly
  7. Stir together eggs
  8. Milk
  9. Lemon extract and lemon rind in a mixing bowl
  10. Add 1 / 3 of the egg mixture to flour mixture
  11. Beat at low speed until blended
  12. Beat at medium speed for 30 seconds or until batter is smooth
  13. Stopping to scrape down sides of the bowl
  14. Repeat procedure two times
  15. Spoon batter into prepared pans
  16. Bake for 25 to 30 minutes or until a toothpick inserted in center comes out clean
  17. Cool in pans on a wire rack 10 minutes
  18. Remove layers and cool on a wire rack
  19. Lemon filling directions:
  20. Combine sugar blend
  21. Cornstarch and water
  22. Cook over medium heat
  23. Whisking constantly
  24. Until mixture thickens
  25. Gradually add about 1 / 4th of hot custard mixture into yolks
  26. Whisking until blended
  27. Return to remaining hot mixture
  28. Cook whisking constantly
  29. Until mixture comes to a boil
  30. Boil one minute
  31. Whisking constantly
  32. Remove from heat and stir in butter
  33. Lemon rind and lemon juice
  34. Place plastic wrap on the surface
  35. Set aside to cool
  36. Whipped cream frosting directions
  37. Beat whipping cream until foamy
  38. Gradually add sugar blend
  39. Lemon rind and lemon extract
  40. Beating until soft peaks form
  41. To assemble cake:
  42. Spread lemon filling between cake layers
  43. Spread whipped cream frosting on top and sides of cake
